It looks like they make them in big dimensions, so you can both get them hot enough, and have enough cooking space. They have vertical racks, too. I've never seen one before today, so I have no idea how well they work, but I assume they are probably awesome for slow cooking. I need more information about them before I leap to conclusions. So far, I've heard they have a bunch of racks. That sounds like vertical cooking space to me.
