(8,827 posts)I say that because "The Rich" usually balance out. I worked busing tables a a country club when I was 15. I got tipped out by most of the servers, and they talk about this sort of stuff, so you can develop a pretty good idea without having served at a high end place like the CC restaurant (although eventually I worked in practically every aspect of food service).
I'd say about 70% of the folks dining at the Country Club tipped within 5% of 20% (so 15-25% was average). From there, I'd say 18% tipped abnormally high and 12% abnormally low to zero. Most of the servers working there agreed that it balanced out. The "bad" was usually when a server would get an 8-top of lingerers which might be their only table for 2 hours and then have that table tip 5% on a 400 dollar bill.
EASILY, BY FAR the worst tipping occurred on Sunday Lunch/Brunch shifts. And we're not talking fundies generally. They are, moreover WASPS. In Texas (where I worked) I'd guess an 80-20 mix of Baptists/Catholics and "other WASP." High end restaurants don't get a lot of Fundies because fundies are usually don't have the bank to eat there.
There are a lot of sub-groups that tip badly, especially at high end places. "Lunch Ladies" or "Ladies who Lunch" who come in, order a Caesar Salad and linger over glasses of cheap white Zin (because they have no actual wine palette). Run a server ragged, linger for 3 hours, talk about their hell spawn (or worse, bring them) and tip 10%.
