(61,853 posts)Preheat oven to 425 - put in a cast iron or even oven proof teflon skiller - we use a 12 inch pan and make it for two.
Peel and thinly slice (as for an apple pie) two medium apples - we used Braeburn today.
Put 2 tbsp butter in the pan, let it melt - then add the apples (spread along the bottom of the pan) and put a liberal sprinkling of cinnamon, as well as some ground cloves, nutmeg and ginger - on top - we probably use at least a tbsp of cin., and half tsp of each of the others - return the plan, let bake until the apples are sizzling well.
In the meantime - in a bowl, mix egg, milk and flour until blended with a whisk using the following proportion: PER PERSON we use 1 egg, 1/3 cup milk, and 1/3 cup flour - if making for one, use a 6 inch pan and 1 apple. So for ours today it was 2 eggs, 2/3 c milk - and 2/3 cup flour. The type of flour impacts the texture - unbleached white makes it puff up the most, all wheat will make it flatter - we use half and half. If you use any non-dairy milk, it really changes the texture as well.
Once the apples are sizzling, remove the pan, pour the batter over the apples, return to the oven and bake at 425 for 25 min.
Serve in wedges with real maple syrup...or whatever!
This is also spectacular with blackberries, blueberries or a mix of both - but we do that in the summer!
