83. I haven't tried that recipe yet, but I'm going to at some point.

It does look delicious. Aside from reducing the amount of butter, I may change the heavy cream for half and half. A quick reduction should thicken it enough.

Pancetta is Italy's response to bacon, but IMO its higher quality an better tasting for cooking.
