I do agree that the society is way too carbed-out. It is well-founded in medical science that a low carb diet is better. This shouldn't be something where coercion is involved. Other means should be used to influence people's dietary habits. In the longer term, when food is abundant (and healthy food is cheap), then we might possibly be able to reasonably talk about taxing unhealthy foods.
