.. pollster may not matter.

It's a phenomenon well-documented in sociology, and covers social norms around religion, race, gender attitudes, and race to name a few. People tend to say what their social norms expect them to.

An example would be random polling done in southern states during the civil rights area that on its face would show a lack of racist attitudes, in direct opposition to the experiences of minorities in those same places.
