Very simple and easy, no gmo corn syrup.

2 cups sugar.

1 cup half and half

1/3 stick butter

1/8 teaspoon baking soda

1 1/2 cups pecans.

Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it boils and bubbles. Turn heat down to medium low, continuing stirring until all sugar melted. (Remember to stir any sugar down from the sides of the pan.)

Cook and continue to stir until mixture temperature is 238 to 241 deg. F. or soft ball stage. (A drop of mixture in cold water forms soft ball.)

Add pecans, stir until mixture begins to thicken and changes to creamy and cloudy, drop by spoonful onto parchment paper.

While pralines are cooling, make fresh coffee and call friends and/or neighbors to join you.
