which comes from farms to farm markets or stores that NY State Inspect. smaller slaughterhouses tend to get more rigorous scrutiny by the state since the USDA isn't involved. I find the meat looks better, and in some cases its cheaper. They don't deal with big processing plants and they do not carry stuff from outside NY State....so no Perdue or Tyson.
