Sometimes, local Anglo residents would work for a few days, then quit, unable to handle the 100+ weather in the fields or the conditions in the poultry farms, with chicken dander and dust flying everywhere and the temperature having to be kept hot so the chicken quills could be pulled out easier for plucking. It's wasn't pretty work back several decades ago and today's minimum work jobs that pay about $1,400 a month or less probably don't cover child care or rent and utilities for many families, let alone transportation and other expenses. My family survived because the employers even let my brothers and sisters work, which child labor laws forbid today. But, they paid my family pennies to the dollar back then...if they even paid.
