The women of whatever sexual orientation or weight were probably unpaid for the participation in the study. People are usually only paid for studies when some danger is involved or Big Pharma is footing the bills. Therefore, their cost of travel and time represents a net loss for them: so these women paid the government to provide the study to the American people.
The researchers, on the other hand, get a pretty cushy salary and pension, whatever they are studying. And they study whatever someone wrote up a convincing grant application for. Obesity has seemed to be a major, screaming headline concern in the U.S. over the past decade, so I can see how studying demographic differences would win someone a grant.
