The Blue Mosque and Süleymaniye Mosque are just amazing too. But yes, the food was like a revelation (and I'm not shy about how much I like food). I did not know until we arrived that it is considered the third cuisine of the world because of the breadth of techniques and dishes created for the royal court. It is amazing and so sad that it is very difficult to find in the US. Have a wonderful trip.
