But I think most people seem to get that their lyrics are also heavily influenced by them also just being horrible racist people.

Blazing Saddles is funny because Cleavon Little's characters actions allows the jokes to work. Place many of the same jokes in a different context and the movie would be horribly offensive. Mel Brooks Jewish jokes work in many of his movies (The Producers for example) but also fall flat and feel clique in his later movies. When doing humor, context is everything.
