But restaurants are not in the business of poisioning their customers. I grew up in Nigeria where restaurants police themselves and I am talking regular restaurants all the way to mobile restaurants that service food from the pan on top of their head and we dont experience a noticeable problems with unhealthy foods.

I know Nigeria is not exactly the most wonderful country in the world but watch Bizzare food or cant remember the other food show on the food channel that showcases food from exotic countries. Most places in the world operate just fine without food inspectors. The greatest motivation these people have is to have a good reputation and keep their customers coming back for more and you dont accomplish that serving up rubbish food ofc unless that is what the customer wants.
