It's more likely to be staffed with people who actually understand food and how to handle it in a way that isn't going to give you the trots; not blindly following the letter of the regulations and hoping for the best but actually knowing what's good and what isn't. More simply, we don't serve something we wouldn't eat ourselves.

Or, if you'd rather strict food code adherence....the Wal-Mart deli. Seriously. Worked there in a pinch once, their internal regs would make the USDA/FDA blush. Damn near literally eat off the floors.
