It's pure cheap shot based on an out-worn stereo-type of blacks as domestics.
Everyone knows Don Rickles's reputation as an insult artist, so I'd like to cut him some slack, but this just fails on every level.
Hey, Don, can you take some constructive criticism?

In the "Dean Martin Celebrity Roasts" shows, slurs against Jews, gays, blacks and so on abound.
