(14,881 posts)(as opposed to digging up all the root) many will grow right back. The mints, at the very least, can come back quickly. Certain perennials you can even dig up and they'll come back in a year or two. My chocolate mint actually does a little better if it gets mowed -- it become very nice ground cover that is still edible.
My marshmallow plants come to mind. Periodically, I transplant a few to my pasture. I dig up at least 6" of root, if not more. The remaining root inevitably resurrects itself 2 years later from 6" under.
Not that this makes up in any way, shape or form for what they did, or makes it less horrendous. And the trees, of course, won't come back.
But at least those assholes who decided to excrete their shit on her life are going to have a hell of a time getting rid of her mint.
