then add a touch of lemon juice, and maybe some herbs. You can also flour-dredge then lightly batter/bread. It's a very white, delicate flavored meat, and doesn't take much to completely overpower the taste.

The muscles do twitch when you first salt them, though, and the moving legs turn some off, for some reason
