In Texas (open carry as of 2 years ago), if you don't want guns in your business, you post a warning saying that you opt out of the open carry law, and no one may carry inside. If someone does carry despite the warning, you can ask them to leave, or you can call the police if you don't feel safe. You are the ultimate authority on your own property.

People in Texas have compiled a list of stores, restaurants and other businesses that have these signs up, and many people (my mother included) have used this list to make purchasing decisions.
Now, there are businesses where open or concealed carry is allowed. So you pretty much have to put up with it as long as that's the law in Texas. Other states do it differently.
