The scientists who are referred to in the OP aren't chemists or physicists just making vague guesses about this - they're people who actually study agriculture for a living. They already know what "well-managed pasture" can produce - and it's nowhere near enough for the world and the trajectory its meat consumption is on.
"Western civilization" has been using more land than is sustainable for meat production, for its share of the world population, for a long time. If the rest of the world tries it too, and the world population increases a bit above what it is now, it will be completely impossible to feed everyone.
