2 boxes of Jiffy cornbread prepared and crumbled
4 cups of cooked pinto beans with ham drained well
1 med red onion diced
1 large green bell pepper diced
2 cups of corn drained
4 tomatoes seeded and diced
½ cup diced cilantro
Mix all ingredients well in a very large bowl.
Now place in your serving pan - I use the large disposable lasagna pan with cover.
*Don't forget to support the bottom*
In a small bowl combine:
1 cup mayo
1 cup sour cream
1 pkg dry ranch dressing mix
1 T chili powder
Spread over the mixture in the pan.
Sprinkle 3 cups of shredded colby jack cheese on top
and garnish with
6 green onions sliced
Chill several hours or overnight.

Oh, yes... It must contained cracked bulgur wheat, but so many make it so that it is mostly bulgur
