(23,416 posts)If they are mild. Color doesn't matter. Rinse ripe, firm whole mild or sweet peppers with not spots, and wipe dry. Put them under the broiler or on the grill and roast them until they are black all over. Turn them so all sides get blackened. They will look terrible, but you are just burning the skin. After they are charred all over remove them from the oven and place in a paper bag. When they are cool enough to handle, take them from the bag and peel off the blackened skin, core them and tear or cut them into slabs. Put them in a jar with a lille olive oil, vinegar and salt. Or Italian dressing. When you taste them, they aren't going to last long.
They are great our of the jar, as a side. I've been making them for over 30 years. You are lucky to have a bumper crop of peppers!
