When I read Bob Delaney's book about his experience going undercover in the NJ mob the one thing that I felt from those pages was the fear and the general emotions that comes with avoiding letting others in on who you really are, close calls, etc.
Someone mentioned Johnny Depp above, while I think Depp is one of the best at playing characters that make you forget Depp is playing them, he was incredibly lame in Donnie Brasco. He didn't capture that fear.
DiCaprio did an excellent job in The Departed portraying someone undercover in an incredibly dangerous situation based on reading first hand accounts of someone who was.

i thought his best film was the one where he played the sleazey guy. can't remember the name.

"Jeremiah Johnson" may be my favorite "Western" of all time -- Oscar-worthy in that, he was.
