Ratios don’t make sense on a scale without a natural zero. Zero in Fahrenheit or Celsius is arbitrary. 120 is not 2/3 of the way to 180 (simmering). If it was, it should be true on any scale. 120F is about 49 C and 180F is about 82C. 120 inches or pounds or dollars is 2/3 of the way to 180 inches or pounds or dollars because there is a natural zero in those units.
