I approach risk with the attitude of first learning what the actual risk is, then if necessary either avoiding it or mitigating it. This helps me avoid irrational fears.

The reality is there just aren't that many actual documented problems with sushi. So lots of people are eating it, and very few are getting sick. If you look at published lists of the most dangerous foods, sushi rarely, if ever seems to make the cut.

The reality is that when it comes to risk associated with foodborne illness, the thing you really should be worried about is your own kitchen.
