In many of these case, could compelling stories be written where they were happy and stable? It's going to take "conflict" of some sort, and in most cases it's going to involve, divorce, disease, or death.
The most compelling one in my book could be the "breakfast" club sequel, only because none of them ended "happily ever after" so the story could pick up in some sense with the concept of "how that day influenced their further progression".
But what will you do with Sam and Annie? Their house sinks in Seattle? The kid grows up to be a shock jock? Annie gets cancer so it's "round two" for Sam?
