Not only is there Chicago pizza, which is of long standing, but the advent of gourmet pizza makes it necessary to be clear. Otherwise you might find yourself confronted with something with an artisan crust and fresh mozzarella, which is unsuitable for baked deliciousness, or maybe no mozzarella at all, topped with things you would never find in a proper pizzaria.
