I have watched some Anime, but I particularly enjoy JRPG's and J-SHMUPS and then the Anime spin-offs from these.

The piano music collections from the Final Fantasy series are superb. Here is one such example:

One of the best SHMUPS series I know that includes some amazing music is the TOUHOU series. Here are a few examples of the artists featured:
