They don't require food or water to speak of for the first 48 hours. They are still absorbing the last of the egg yolk through the navel and umbilical cord, and that provides a built-in reserve of nutrients and fluids. Some hatcheries do now put in gel-packs of a nutrient/fluid gel for them to peck at, but not all.
