2. It's mozzarella made from buffalo milk

Personally I think it melts really nice. Plus the flavor is a bit stronger than mozzarella made from cows milk. Where cows milk mozzarella kind of disappears into the rest of the dish. The Buffalo milk mozzarella kind of holds its own and adds a bit of depth to the flavor.
