Granted it's been years since I've eaten one. My Mom used to make Rice-a-Roni with gizzards when I was a kid...they are very chewy.

So I went down memory lane in care of Google...

I guess it could very well be a gizzard. The top picture is more of what I remember than the bottom one. I don't know that I would have eaten one if it had looked like the bottom picture.
