Mel Gibson is an example of that for me. I loved Riggs in Lethal Weapon and also liked his characters in Tequila Sunrise and Maverick, but not many others! Then there's what's been reported about his personality in real life which for me is unattractive and disturbing.

With Kevin Sorbo too. Absolutely adored him as Hercules but haven't found anything else in his body of work that I've enjoyed, and not impressed with him in any interviews that I've heard, but I realize those give you a limited view of an individual as well.
