If you are going to eat beef, it seems the safest way to do it is to raise the cattle yourself. Great that the fellow who has been helping with the horses knows what he is doing, that is the best all around. When I was a kid, my folks would buy and split beef still on the hoof with others and that way it would fit in the freezer. Back then, we weren't worried about hormones and pink slime, we were just cheap
