I buy 5-lb bags of beans, and buy 1/3 of it ground and use that first, so 15 lbs at as time. Light roast, they roast to order. Love this company, havent been using them very long. Blackety-black for me, and usually mice and strong.

You can buy one can of regular and the other decaf and mix your own.

We keep it in a very air-tight jar with a solid rubber gasket, and it has never absorbed anything.
