I spent 15 years in the restaurant business. I've worked with chefs from very good programs and the food they prepared was wonderful. However, some had a hard time adjusting to the fast pace of a tourist based market. This sounds like a wonderful opportunity for kitchen staff to learn the skills they will need in to be successful in the New Orleans market. A win for everyone.
