What's for Dinner, Sat., Jan. 10, 2026 [View all]

Herb-baked feta and peppers. This is one of my favorite recipes. It has cherry tomatoes, red onion, and peppers. I'm also adding a few spears of asparagus.

This time I am adding chickpeas, or garbanzos. I found out I can cook them from the dried state in my pressure cooker. Once I do that, I will mix the chickpeas with an herb/olive oil mixture and add them to the roasted feta and peppers. Here's how I roast the peppers:



I love this dish because I can just have little portions of it all evening. Cornbread muffins, toasted, to go with it.

Kombucha: sparkling cider and kombucha, mixed.

Dessert: Angel food cake, Greek yogurt, and super-size blueberries with crystallized ginger.
