Louisiana Beef Stew
3 lb chuck cubes 1 can diced tomatoes
2 T oil 1/2 C red wine vinegar
1/2 t celery salt 2 medium onions, diced
1/4 t garlic salt 1/2 C raisins
1/2 t pepper 6-8 carrots
1/2 t ginger
3 T flour
Combine spices and flour and sprinkle on beef cubes. Brown in oil in Dutch oven or heavy pot. Add remaining ingredients except for carrots and raisins. Add 1/2 C water, bring to a boil; cover and simmer for 2 hrs adding water if needed. Add carrots and raisins and simmer 30 min or until carrots are tender. Serve over hot rice.
