2. I love really simple fare like that,

without the 100 ingredients, just food, fire and seasoning.

I did something a little more elaborate last week on the stovetop grill, pollo asado.

I didn't have all the gear for any of the official mixes, so I used the juice of 2 limes, an equivalent amount of olive oil, onion, garlic, cumin, and 1/4 cup of ground red chile. I buzzed the works in a blender, dumped it into a plastic baggie, and added 4 chicken breasts, squishing them around so the marinade would touch everything.

I left it in the fridge for 12 hours, then grilled it. It was fantastic. The one change I'll make the next time is throwing a couple of serrano peppers into the blender, the result wasn't quite as hot as I prefer it to be.

The chicken breasts can be eaten as is with very simple sides, or chopped and used in chicken tacos.
