2. I have jarred, prepared horseradish on hand. Some of them are > 1 year old. Keeps well.

Besides the obvious beef dish use, it can be a good kick in a lot of other stuff. I'm steaming some asparagus tonight. It'll be topped with a butter/tarragon/horseradish dressing. Tarragon might be a bit much, but that's what I'm going to do.

Love horseradish.
