I don't use the chipotles, and I don't bother with the chicken stock unless I have a bunch of it on hand. Not a big fan of cumin, either. Otherwise, it has pretty much the same ingredients, although I just use whatever cheap cut of pork is on sale. Wish I could get Big Jims around here, but Anaheims work well.

All of a sudden, I have a big hankerin' for chili verde...
