13. Yeah, I have some spicy pintos, leftover, I want to toss in. The bulk is beef & rice.

I blanch the bells before stuffing. Then top with grated cheese for the bake. Everything's basically cooked by then so the bake is just to finish it all off. Use a little bit of water in a small bread loaf pan to bake the peppers in. They sit up well and get some steam from the water.

I like making these, you can go so many ways with the stuffing and spice mix. Italian, Latin American, all veggie (substitute sauteed mushrooms and diced zucchini for the ground beef), etc.
