25. This one came out great. I used a 7 grain pre-made mix w/ the ground beef.

"Seeds of Change" - Brown rice, rye, barley, bulgar, millet, quinoa, wild rice. Browned all in the skillet, then added the leftover pintos, diced tomatoes and a couple of tablespoons of the bell pepper water. Simmered till the water was absorbed or cooked off.

Skipped the tomato paste / sauce entirely. Used a bunch of grated sharp cheddar for the bake. Everything held together well and the peppers were just done, no more than that.

Love when it works on the fly. I'm calling this Bell Peppers Rustica.

And one was enough, there's another for tomorrow.
