6. eggplant parm!

I'm excited - I've been without parmigiana cheese for about a year, it's not in my $2 a day budget. So I make eggplant parm, but just with the mozzarella. Last night it hit me - I have a big jar of nutritional yeast in the fridge from last time my vegan kid visited. I'm so in the habit of just using it on kale chips, I forgot all about using it in other recipes.

I bought tomatoes in a marked down produce deal today, a big bag of them for 99 cents. Then they came with me on the rest of my 20 mile bike ride, so the sauce is half made already. Oops.
