Something I whipped up for dinner last night - yes, includes a pic! Gotta try it [View all]

We have greens coming in from the garden - lettuce and arugula, as well as basil and chives...sugar snap peas and asparagus and strawberries from the farmers market. sweet peppers. Toasted walnuts. More after the pic.




I marinated a salmon filet (used Costco salmon) in a mix of bar-b-que (smoky red type) and Island Teriyaki (Trader Joe) for 24 hrs in the fridge - and some asparagus in a mix of lemon juice, olive oil, salt and pepper for an hour.

While I had the grill warming, I tore the lettuce and plated it, added some shredded basil and chopped chives - added raw snap peas and cubed sweet peppers and sliced strawberries. Grilled the salmon for 3 minutes per side, then grilled the asparagus for about 5 min.

Added the asparagus spears to the salad, then topped with a slab of the salmon. add toasted walnuts, and drizzle with the marinade from the asparagus.

Wow.....the flavors all worked together so well.
