Chicken satay

Pepper-onion kabobs to go with above

Cucumber salad

This is going to be so easy because I'm doing the chicken satay in the slow cooker. I'm not even making my own peanut sauce, as I have a jar of it from Trader Joe.

I'm going to blanche the peppers and onions and then broil them.

Raspberry swirl cheesecake for dessert.

p.s. tip: check out your Whole Foods to see if they have boneless, skinless chicken thighs on sale for $2.99. All their chicken is free-range, so this is an excellent buy. I picked mine up yesterday. Yes, they are big packages, but you can always freeze some.
