6. Roast pork with carrots and onions didn't turn out well. Too pale, dry, not much

flavor. It was a nice-looking center-cut pork loin that I seared in a dutch oven after searing the onions and carrots, but there wasn't much fat on the meat and I probably should have done a marinade and put it in a crockpot. At least the vegetables turned out well. We had mashed potatoes, roasted asparagus, and cabbage steamed with leeks and turmeric. Broccoli/tomato salad with peppers and green onions.
