7. This recipe sounds delicious, BUT,

I have given up on pork chops. I used to make smothered, baked, pork chops, which were always delicious. What you say about the current chops is true. No matter how I fix them, slow bake on low temp, quick sauté in skillet, they are tough and dry. I haven't tried a salt brine, would that help the current pork available? I don't live near a Whole Foods or good meat market with fatty chops. I do cook pork tenderloin, which is always good, however cooked.
