1. If someone wants to venture into making natural yeast bread by hand...

I suggest reading Ken Forkish's Flour Water Salt Yeast. It gives step by step instructions on how to get started making really good bread from natural yeast starter using basic materials you can find locally and/or online and a normal oven.

From there, natural yeast bread is infinitely variable depending on how and what you feed your starter, hydration levels, proofing methods, etc.

There's something quite satisfying about making bread completely by hand using natural yeast instead of commercial yeast.
