2. I made a batch last week and my wife and I loved them

I used dried red kidney beans which I soaked overnight, rinsed, simmered for two hours, rinsed and drained again before adding them to the pot.

Ingredients

1 tbsp oil
10 oz bacon, chopped
2 medium onion, chopped
3 tsp minced garlic(or 1 1/2 tsp garlic paste)
28oz dried red kidney beans or pinto beans , soaked and cooked
1 1/2 cup ketchup
1 6 0z. can of tomato paste
1 cup molasses
1/2 cup apple cider vinegar
1 1/2 cup water
4 tsp mustard powder (or 2 tbsp Dijon or American mustard)
2 tbsp Worcestershire sauce
1 tsp cayenne pepper
2 tsp salt + pepper to taste

Instructions

Heat oil over medium high heat (can skip oil if bacon is super fatty). Add bacon and cook for 1 1/2 minutes.
Add onion and garlic. Cook for for about 3 minutes until onion and bacon are golden.
Add remaining ingredients. Stir, bring to simmer, then place lid on. Cook until sauce is thickened.
