11. Just the husband and me

So we had a turkey breast coated in butter and our own poultry seasoning.

The sides were green beans with mushrooms (NOT the sodium/carb bomb casserole), baked sweet potatoes, my husband’s squash-stuffed stuffing, cranberry mostarda, and Parker rolls. Plus Trader Joe’s dark chocolate with almonds and some goat gouda for the end of the meal.

All of it was diabetic-friendly and low sodium. Well, not the chocolate, but I had set aside the sugar grams for it, so I was good there.

This was the first holiday meal after my diabetes diagnosis, and we were delighted with how the changes/variations we made turned out. It was good to try new things for the holidays, and eat healthier while we were at it.
