11. I'm going to guess that Friday's doesn't pass the tip to the server

Just like most chains. It goes into a general pool that can be distributed to the operator and parceled out to the staff, as the operator sees fit.

I always leave tip in cash and wait around to make sure the person that supplied the good service could receive it. If s/he wanted to add it to a pool for distribution, great.

Sort of like when I check out of a hotel room. I'll try to remember who I've seen helping and give them something special directly. Paris Hilton doesn't need my measly bucks.
